This blog is not about any of that, though. haha.
Since getting married, I have become far more domestic than I ever thought I'd be. I pack Dom's lunch on the days he works, make him breakfast before he leaves, do laundry and clean our room on Fridays, and do the general errands throughout the week. One of my favorite activities is cooking dinner, though, because we do it together.
The tricky part, however, has been making our diet healthy while trying to work around the fact that he doesn't like fruits or vegetables. haha. He grew up in a house where he was forced to clean his plate, so as an adult he has a distaste for them. Luckily, he has an open mind, and I've found a few recipes to get him to incorporate fruits and vegetables in his diet (like peanut butter and apple sandwiches with whole grain bread). One really healthy salad that has fruits, vegetables, and proteins that he really enjoys, though, is a carrot salad I make. It's really refreshing, crisp, and a little sweet and serves as a nice addition to a light lunch or dinner. We both really like it, so I figured I'd share the recipe for it.
Carrot Salad
4 carrots, shredded
1 apple, peeled, cored, and shredded
1 tbs. lemon juice
2 tbs. honey
1/4 cup blanched slivered almonds (or walnut halves)
1/2 cup cranberries
Super easy and really tasty.

- In a bowl, combine all ingredients. Toss and chill before serving.
